Mmmm...pot roast!

One of my favorite dishes for winter dinners...


Parslied Oven Pot Roast

2 ½ teaspoons salt (I usually leave out the salt)
1/4 teaspoon ground black pepper
1 4 ½ to 5 pound bottom round of beef
1 1 lb., 12oz. Can tomatoes, broken up
3/4 cup dry red wine
1 1/4 cup instant minced onion
2 tablespoons parsley flakes
1 bay leaf
½ teaspoon instant minced garlic
6 medium carrots, peeled and sliced
1 ½ pounds zucchini, sliced
2 cups cherry tomatoes, pricked with fork

Rub 1 ½ teaspoons of the salt and black pepper over surface of meat. Place meat, fat side down, in a heavy over-proof casserole. Brown well on all sides in a preheated hot 450 degrees) oven about 50 to 60 minutes. Drain off fat. Combine tomatoes, wine, minced onion, parsley, bay leaf, minced garlic and remaining 1 teaspoon salt. Pour over meat. Cover; reduce heat to moderate (350 degrees) and bake 2 ½ to 3 hours or until meat and vegetables are tender. Add the carrots 40 minutes before cooking time is up, the zucchini 20 minutes and the cherry tomatoes 10 minutes before time is up. Slice and serve with the vegetables. 8 to 10 servings.
